How to Bake Vegetables

I do a lot of meal prep. Part of the reason I am able to keep up with meal prepping week after week is because I make it easy on myself! I cut corners and use tricks and tips whenever I can.

One of my favorite quick tips is baking all of my vegetables with only a baking sheet. This saves me a lot of time and a lot of headache. Below is my quick recipe for pulling together a delicious spread of baked veggies. These ingredients could very easily be swapped out for other spices or sauces that you like. This is just my favorite way.

Baking veggies this way makes my meal prepping so much easier. If you aren’t into meal prepping individual meals, this is still a great way to batch prepare. Simply cook on the veggies on Sunday and store in the fridge in a sealed container.

  • 5 cups Vegetables I used all sorts! Broccoli, Cauliflower, Carrots, Brussels Sprouts.
  • 1 cup Vegetable Stock
  • 2 Tbsp Mixed Seasoning I use Mrs. Dash or something like that
  • 2 Tbsp Garlic granules
  • 2 Tbsp Onion powder
  • 1 tsp Salt


  1. Heat oven to 350 degrees.

  2. In a large bowl, mix all the ingredients and stir until the vegetables have been coated.

  3. Pour the entire bowl onto the baking sheet. It's okay if there is still liquid, just make sure your baking sheet has a lip so the excess vegetable stock doesn't spill off. 

  4. Place in oven for 35 mintues.
