Vegan Pumpkin Holiday Cookies

Ingredients

  • 2 1/2 cups whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup butter melted
  • 1 tsp vanilla extract
  • 1 1/2 cup coconut sugar
  • 1 cup pumpkin puree
  • 1 flax egg
  • 1 cup chocolate chip cookies

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, add flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a small bowl, mix butter, coconut sugar, pumpkin, vanilla extract and flax egg. Stir until creamy.

  4. Add dry ingredients to the wet ingredients and stir.
  5. Scoop spoonfuls onto a baking sheet.
  6. Bake for 15  minutes.
  7. Eat!
