Single Serving German Potato Salad

This potato salad sort of happened by accident. Well, not the entire thing, but certainly the “German” part. I usually bake a bunch of potatoes in the oven over the weekend and keep them in the fridge for about a week. That way I can just warm them up when I’m ready to eat them. This is what I did tonight, but I was craving some sort of creamy sauce to add to the potato. But then, once I satisfied that craving, I started craving something salty, when where the sauerkraut came in! And here we have the German Potato salad!

If you need more than a single serving, just multiply this recipe by the number of servings you need! It’s as easy as that!

Single Serving Germain Potato Salad

Ingredients

  • 1 red skin potato
  • 1 1/2 Tbsp vegan mayonaise
  • 1/2 tsp dill
  • 1/2 parsley
  • 1/2 tsp garlic granules
  • 1/2 tsp onion powder
  • 2 Tbsp sauerkraut

Instructions

  1. Bake the potato in the oven for approximately 20 minutes on 400. Or, if you are in a hurry, microwave the potato for approximately 5 minutes or until it is soft.

  2. In a medium sized bowl, mash the potato.

  3. Then add the vegan mayo, dill, parsley, garlic and onion powder.

  4. Top with sauerkraut and eat!
