I love salads. Especially in the summer time. The only thing is that sometimes they don’t fill me up! I have learned in recent years that adding grains and beans will fix that problem in no time! This salad will keep you full but also keep you feeling light for those hot summer days. Check out my salsa recipe or feel free to grab any fresh salsa from the grocery store, they should all work just as well.

This simple summer salad is both hearty and refreshing! Packed with fiber, protein and citrus. You will feel light and full!

Ingredients

  • 2 cups Spinach
  • 1/2 cup Brown rice
  • 1/2 cup Black beans
  • 1 cup Tempeh
  • 1 Tbsp Fresh garlic
  • 1/4 cup Salsa
  • Juice of 1/2 lemon
  • Juice of 1/2 lime

Instructions

  1. Simply toss all ingredients in bowl and enjoy!
