I love salads. I eat them all the time. I often hear people say they don’t particularly like salads. I truly can’t imagine! But I think I know why. I think it’s because they don’t top them with the right dressing. Now, I know, don’t dressings have loads of calories? Aren’t they bad for you. No. I do not think so. Lettuce has almost negligible calories! So, 100-200 calories from a salad dressing is not going to kill you. However, salad dressing can have a lot of oil. If you would like to avoid oil, tahini-based dressings are a great choice.

The Best Salad Dressing?

My favorite dressing? Salsa! Salsa is such a tasty treat and it’s delicious on salads. It’s low in calories, low in fat and typically never contains oil. The juice of a fresh lemon and a fresh lime along with the salsa makes for a perfect salad dressing.

Get Creative!

In my salads I combine all sorts of things from grains, to beans to nuts to seeds to veggies and fruits. The salad pictured here has:

  • Spinach
  • Cucumber
  • Yellow Squash
  • Zucchini
  • Yellow tomatoes
  • Red tomatoes
  • Walnuts
  • Sesame Seeds
  • Scallions
