Dairy-free Potato Salad

Ingredients

  • 4 red skin potatoes
  • 2 Tbsp veganaise
  • 1 Tbsp lemon juice
  • 1 Tbsp Apple Cider Vinegar
  • 1/4 tsp salt
  • 2 tsp fresh garlic (or 1/2 tsp garlic granules
  • 1 tsp onion powder
  • 1 Tbsp scallions

Instructions

  1. In a large pot, using a vegetable steamer, drop in the 4 potatoes and steam for approximately 35 minutes or until soft.

  2. Once steamed, let cool for approximately 10 minutes.

  3. Once cooled, dice the potatoes into small cubes and toss into a mixing bowl.

  4. Add the remainder of ingredients to the bowl along with the potatoes.

  5. Feel free to mash up the potatoes! Or keep them intact in cubes. Both ways are delicious!
