Low Fat, Low Calorie Creamy Mushroom Sauce

This Low Fat, Low Calorie Creamy Mushroom Sauce saved the day yesterday. For many years, I added oils and nut milks to whatever I wanted, whenever I wanted! But now that I have refined my eating patterns, I have begun to replace many bad habits with better habits and this has been one of them. I am not sure yet if I plan to return to using oils, I’ll have to determine that later. However, I am certain that I will definitely return to using more nut milks after my training is over. I use them only sparingly now.

So, last night I was craving fats and oils and in order to quench my craving and also stick with my healthy eating intentions, I created this super quick, super simple creamy mushroom sauce.

Low Calorie, Low Fat Creamy Mushroom Sauce

Low Calorie, Low Fat Creamy Mushroom Sauce is great for a topping on pasta, rice or even just veggies.

  • 2 cups mushrooms
  • 1/2 cup celery
  • 3 cloves garlic
  • 1/4 cup onion
  • 1 Tbsp arrowroot powder
  • 1/2 cup vegetable stock
  • 1/4 cup water
  • 1/2 cup soy milk
  • 1 dash salt


  1. Turn burner to medium. In a skillet, add the 1/2 cup vegetable stock, celery, mushrooms, onion and garlic (everything but the arrowroot!) and cook until onion begins to soften, approximately 3 minutes.

  2. Next, replenish the liquids with the 1/4 cup of water, use more if needed. 

  3. Add in the 1 Tbsp of arrowroot and stir for about 30 seconds.

  4. Remove from heat and serve!
